Ingredients:
1 cup firm tofu
2 1/2 cups canned garbanzo beans, cooked according to package directions
1/4 teaspoon salt
2 Wasa crispbreads (any flavor with the Best Life seal)
1/3 cup fresh parsley
1/2 cup chopped onion
2 teaspoons grated lemon zest (or zest of one large lemon)
1 tablespoon extra virgin olive oil

Preparation:
1.Puree tofu in a food processor for 1 minute. Set aside.

2. Add garbanzo beans and salt to food processor and combine for about 1 minute, until fully incorporated but still slightly chunky.

3.Transfer mixture to a large mixing bowl and stir in the parsley, onion and
lemon zest. Set aside.

4. Clean food processor and puree crispbreads until they are the consistency
of breadcrumbs, about 1 minute.

5. Add breadcrumbs to tofu mixture, stir, and let sit for 5 minutes.

6.While mixture is resting, heat grill to medium-high heat.

7.Form tofu mixture into 4 large or 8 small burgers.

6.Cook burgers on a hot grill for about 7 to 10 minutes on each side
depending on the heat of the grill. Serve.
