Chicken and CousCous with Spinach, Dried Cranberries and Toasted Pinenuts


1/4 cup pine nuts
1 tablespoon olive oil
3 cloves crushed garlic
1 package (10 oz) fresh spinach
1 cup couscous, dry
1/4 cup cranberries, dried, sweetened (craisins)
2 tablespoon parmesan cheese, grated
1 cup, chopped or diced roasting chicken, light meat

1. Toast pine nuts in sauté pan over medium heat until light brown marks appear.

2. Saute garlic in olive oil and add spinach until spinach just starts to wilt.

3. Cook couscous according to directions. Add dried cranberries to cooking couscous about 2 minutes before it is done cooking to soften the cranberries.

4. When done cooking, add chopped and cooked chicken, pine nuts and spinach to couscous and combine. Sprinkle with Parmesan cheese.
