Thyme Marinated Zucchini

INGREDIENTS
1 pound yellow zucchini sliced
1/4 cup thinly sliced red onion
1 teaspoon leaves of fresh thyme
2 tablespoons cider vinegar
1 tablespoon olive oil
1/4 teaspoon salt
black pepper to taste


DIRECTIONS
  1. Combine all ingredients. Let sit at room temperature for 15 minutes tossing frequently or in the refrigerator for up to 24 hours before serving.
