Black Bean and Noodle Soup


Makes 4 servings
Prep Time: 10 minutes
Total Time: 30 minutes



INGREDIENTS
1 1/2 cups black beans, cooked from dry beans or canned, no salt added
1 bay leaf
1 large, carrot, chopped
1 onion, chopped
2 cloves garlic, roughly chopped
1 red jalapeno or peppers of choice, chopped
1 teaspoon rosemary, chopped (or 1/2 teaspoon dried)
1 teaspoon sage, chopped (or 1/2 teaspoon dried)
2 tomatoes or 2 cups canned, no-salt-added tomatoes, chopped
2 cups cooking greens such as chard, collard greens, escarole broken in bite size pieces
6 cups water
7oz. (1/2 package) cooked Barilla Plus Pasta Penne - cook following package instructions
1/4 teaspoon salt
4 tablespoons grated Parmesan



DIRECTIONS
  1. In large pot combine beans, bay leaf, carrot, onion, garlic, peppers, rosemary, sage, tomatoes, greens and water.
  2. Bring to a simmer and cook for 20 minutes.
  3. Add cooked pasta and salt; heat thoroughly.
  4. Evenly divide into four soup bowls, top each with a tablespoon Parmesan.
