Angel Hair with Artichokes, Zucchini and Lemon

Makes 6 servings

Ingredients:
2 medium zucchini, sliced
1/2 cup extra virgin olive oil
2 cloves garlic, minced
2 packages (9 oz each) frozen artichoke hearts, defrosted
1/4 cup lemon juice
2 teaspoons lemon zest
1/2 box (7.25 ounces) BARILLA PLUS Angel Hair pasta
1 tablespoon fresh tarragon, chopped
1/3 cup Parmigiano Reggiano cheese, freshly grated

Directions:
1. Season zucchini with salt. Drain in colander for 30 to 60 minutes.
2. Heat olive oil in a large skillet. Add zucchini and saute until tender.
3. Add garlic and saute 1 additional minute.
4. Add artichoke hearts, lemon juice and lemon zest. Simmer for 2 minutes.
5. Cook pasta according to package directions. Drain. Add pasta to skillet.
6. Add tarragon and mix well. Sprinkle with Parmigiano cheese and serve.
