1 second spritz vegetable oil cooking spray
2 leeks leeks, white part only, thinly sliced
3 cups packed fresh spinach
4 sheets Wasa crispbreads, crushed
4 eggs or 1 cup liquid eggs such as Better’n Eggs®*
1 cup skim milk
1/8 teaspoon ground nutmeg
1/8 teaspoon salt
1/2 cup reduced fat Swiss cheese, cubed
1. Heat heavy bottom skillet over medium heat. Heat oven to 375° F.
2. Coat skillet with cooking spray. Cook leeks in skillet for 5 minutes, stirring often. Stir in spinach and remove from heat.
3. Coat a 9-inch pie plate with cooking spray. Cover bottom of pie plate with Wasa crispbread crumbs. Cover crackers with leek and spinach mixture.
4. Beat together eggs, milk and nutmeg in a large bowl. Season with salt and pepper. Pour egg mixture over leek and spinach. Distribute cheese over top.
5. Bake for 40 minutes.
