Creamy Spinach Soup with Garlic Toast


6 cups spinach, tightly packed into measuring cup
1 cup lite silken tofu
1/2 teaspoon salt
1 1/2 cups water
2 teaspoons, finely chopped garlic
1 or 2 second spritz olive oil cooking spray
4 slices whole grain bread (about 90 calories per slice) cut on the diagonal

1. Garlic toast: Spray bread with olive oil spray and sprinkle/spread one side of bread with garlic

2. Toast at low heat till crispy, about 5 minutes

3. Soup: Puree spinach, tofu, salt and water

4. To serve, gently heat soup while stirring constantly

5. If not served immediately, puree again just before serving

6. Garnish with garlic toast
