Almond Crusted Walleye

Makes 4 Servings

Total Time: 20 minutes

Parmesan cheese and fresh basil create a delectable crust for this favorite freshwater fish.

INGREDIENTS
1 slice 100% whole wheat bread, dried (set bread in a warm place until dry and crunchy)
1/4 cup sliced almonds, finely chopped
1/4 cup shredded Parmesan cheese
2 tablespoons chopped fresh basil
1/2 teaspoon seasoned salt
1/4 cup (2 ounces) AllWhites® 100% liquid egg whites
1 pound walleye fillets, cut into 4 pieces
1 1/2 tablespoons Bestlife™ Buttery Spread, Regular or Olive Oil, melted

DIRECTIONS
Heat oven to 400° F. Line 15x10x1-inch baking pan with aluminum foil. Spray with nonstick cooking spray; set aside. In food processor grind bread into fine crumbs or use knife to finely chop. In shallow bowl combine ground bread, almonds, cheese, basil and seasoned salt; mix well. In second shallow bowl place AllWhites®. Dip each walleye fillet in AllWhites® and then coat with bread mixture; patting mixture over fillet to fully coat.

Place coated fillets on prepared baking pan. Drizzle coating with melted butter. Bake, uncovered, 12 to 14 minutes or until fish flakes easily with fork.

NOTES
Round this out with a cup brown rice drizzled with one teaspoon olive oil or two whole wheat dinner rolls spread with oen teaspoon each trans-free margarine and a large green salad topped with one teaspoon olive oil and a splash of vinegar.

Celery Root Mash

Makes 4 Servings
Prep Time: 10 minutes
Total Time: 35 minutes

Try this recipe as a substitute for mashed potatoes. The fresh flavor and rich mashed texture pairs well with lot of different main dishes.

INGREDIENTS
2 celery roots peeled
2 tablespoons Bestlife™ Buttery Spread or Olive Oil Spread
1/8 teaspoon salt
black pepper to taste

DIRECTIONS
1. Peel celery root and chop into 1 inch chunks.

2. Place in medium pot, cover with water and bring to a boil.

3. Cook untill celery root is tender (about 25 minutes).

4. Drain celery root and place in food processor with Bestlife™ Buttery Spread, salt, and pepper.

Place coated fillets on prepared baking pan. Drizzle coating with melted butter. Bake, uncovered, 12 to 14 minutes or until fish flakes easily with fork.

Irish Oatmeal with Apple and Cinnamon

Makes 4 Servings
Prep Time: 5 minutes
Total Time: 12-30 minutes

The flavors of apple and cinnamon enhance the already delicious steel cut oats.

INGREDIENTS
1 cup raw steel cut oats (regular or quick)
2 apples cored and shredded
1 teaspoon ground cinnamon
1 teaspoon maple syrup
1/8 teaspoon salt
4 tablespoons toasted chopped almonds
1 tablespoon Bestlife™ Buttery Spread or Olive Oil Spread

DIRECTIONS
1. Bring 3 cups of water to boil in a medium pot. Add salt and stir in oats, apple, cinnamon and maple syrup.

2. Cook oatmeal according to the package directions.

3. Divide into serving bowls and top with spread and almonds.

NOTES
Total time is between 12-30 minutes, depending on whether you use quick or regular oats.
